I'm not sure if this is the way everyone does it, but one obvious way
would be to use the Palm emulator:

<http://www.palmos.com/dev/tech/tools/emulator/>

This runs on your local computer, pretends to be a Palm device, and you
can take screenshots as you would any other program. They also have
Windows, Mac, and UNIX (source-code only) emulators available.

Some companies just treat their developers well, I guess...
