Chiming in late here, but you could use drawings.
I would avoid something that looks too cartoony. If you can't sketch yourself, hire someone who can. This has a couple of advantages.
1. Because it is a drawing, you can make drawing as race and gender neutral as possible. Maybe you can find some clip art.
2. Photos contains an overabundance of data. I have been told to avoid photos altogether in technical documentation, because the level of detail presented in a photo distracts from the features you want to emphasize.
3. Drawings can't sue you. Only the artist can do that.
