Mike,

Assuming you have Acrobat (4 or 5), you can use the object selection tool to select an image that is already in one PDF, then copy it, then paste it into a different PDF (or the same one in a different location). You can also import images directly, which is sometimes quicker than putting the image in a document and distilling it.

What you cannot do is copy an image that is in a different application (such as Word, PhotoShop, PowerPoint) and paste it into a PDF. You have to go PDF to PDF.
