Geoff,

There are some Acrobat plugins that purport to be able to do that. Try www.pdfzone.com for reviews and links.

You might also try using Adobe Illustrator to extract the tables. I don't think you'll be able to get them into Word-editable format that way, but as an alternative you could just keep editing the tables in Illustrator and embedding them into the Word doc (OLE).
