Or perhaps Open Office is a perfect candidate for the Missing Manual series.Have a look at http://www.openoffice.org/documentation.html to see what's already being done.
Perhaps it's time to start writing.
I know that there were several books available for StarOffice 5.2, the proprietary program that OpenOffice originated from. Also, StarOffice 6.0 (basically an enhanced version of OpenOffice) is supposed to come with a manual.
BTW, today I'm finishing off a comparison of OO and MS Word for the Techwr-l web site.
