Alarmed as I am to read that Marguerite is into cooking hermits (I thought
they just kept to themselves and did no one any harm), I will still venture
to reinforce the point she made about including a table for doubling and
tripling quantities in her recipe.
I can hear an engineer sneering, "Who doesn't know how to double quantities?"
But this is a fine example of knowing both user and environment. In a
kitchen, with water boiling and onions sizzling, trying to triple 2 tsp. can
lead to regrettable errors.
In general, experts contemplating at leisure are not the best judges of what
is obvious, or necessary.
