An Engineered approach also called a Modular approach.
Organinzing documentation by first chunking the
subject into "right-size" pieces is a key element of

A Crafting approach is also called a Linear approach. It is simular to the approach used in writing a novel.
Basically involves crafting one paragraph after
another in sequence, without first chunking.

Okay, now my antennae are quivering big-time. Not only is this a false dichotomy, but you've constructed a strawman. No serious tech writer uses what you are calling a crafting approach. Everyone works in discrete chunks, no matter what they call their process.
