On the other hand, I have worked with applications where selecting the x
check box and selecting x are actually two different things with two
different results.

Example: to delete an item, you select its check box and click delete.
The name of the item beside the check box, however, is a hyperlink; if
you select that, it takes you to a page where you can edit the item.

I'm not sure how common such a layout is, but it's certainly one good
reason why you might want to use the longer version in documentation.
