I've relied on every boss I've ever had to be trustworthy,
and flexible and to do the right thing. The few that didn't
live up to that did not remain my boss for very long. If
abuse of casual OT was rampant, I might feel differently
about the idea of trading in the plusses of being a
professional for the assurance of mandatory OT pay,
but that has not been my experience as an employee.
OTOH, ss a contractor (or as a manager engaging
contractors), I also prefer hourly billing; it's just easier
for all involved than trying to guesstimate fixed prices
for accomplishing what always seems to turn out to be
the unforseeable.
