Mike:

On further reflection I realized that probably everybody subvocalizes as
they read text. That is, the words are sounded silently inside the
reader's head. I'll bet there's a body of research out there somewhere
to confirm this.

There is no sound for a symbol, so embedding a symbol inline in text
must always cause a stumble in that internal narrative.

Further, I'll bet image processing and text processing happen in
different parts of the brain, and that's another possible source of
dissonance.

Myself, for procedure structures, I'd prefer a two column table with one
row per step. The first column would be the graphical or iconic
representation of keys pressed. The second column would be the text for
the step.
