I have a suggestion about the graying issue. Look for industries that are called "aging" industries. These are the ones that were neglected by young people starting in the 80s when computers became THE thing to go into. 

Now those same industries are in crisis because there is no new generation of young people coming up. Recreating the programs that used to churn them out (that have been closed or cut to the bone) is a national priority, because the technologies are as critical as ever. Public works like bridges and power lines have not lost their usefulness. Mainly, I'm talking about non-digital engineering, like civil engineering, electrical power engineering, etc. I think that the age issue is less of a problem when the people hiring you are at least in their 40s, because no one in the building is younger than that. This has worked for me a couple of times. 

The "old" people doing the hiring might be --yipes!-- in their 50s, instead of in their 20s.
