Yes, that works fine. Just bear in mind new-ish Mac laptops only have a 'mini displayport' connection though, so you'll need a special cable or adaptor to connect mini displayport to dvi or hdmi. I found a suitable cable on Amazon for half the price of the adaptor from Apple.
Someone else asked about multi-touch gestures not working on Windows on Mac - works for me, I'm using Windows 7 64 bit on a 20 month old MacBook right now, and two finger swipe on the trackpad does scrolling. I set Windows up using Boot Camp - if you've done this and it's not working for you then maybe you're missing some drivers? Apple supply driver updates, but if you have a relatively old Mac then the Boot Camp on your boot DVD may not have the latest drivers - you can download them from Apple (Boot Camp Update is what you want).
