We still use Word for our doc projects, large and small, but are thinking of moving to DITA. DITA is a trend your students should be aware of.
But chances are good some will land a job where they use Word. So please give them some indication of what Word is capable of. They should be introduced to styles, template design, and automations. One vendor for a CCMS said Word is only good for writing letters; his ignorance did not endear me to the product he was peddling. There are tech writers who believe the same thing. Don't let your students be among them. They can quickly become invaluable to a company if they can master, and help the company master, Word.
Word is not cutting edge. But mastery of it can give your students a reputation for being so--at least among some managers.
