I'm using 2016 and Insert Table of Figures is a separate item on the ribbon. If you are using an older version w/o the ribbon interface you'll want to take a little time to learn it instead of learning it when you have a project due.

Oh, I'm all up on the ribbon. I think it was introduced back in Word/Office 2007. Visio lagged behind far longer than one would expect, but it, too, has had the ribbon for quite a long time now.

And your observation that if you look under the covers of what the ribbon does (in terms of drilling down to the dialog box level) is absolutely right: drill down far enough in the modern interface and you'll find the same options that used to surface quickly from the toolbar menus.
