Why get rid of them? If you have enough desk space, a second monitor gives
you more real estate to work with. Use one for working on, the other for
system stuff and toolbars.
Also, it's a good idea to keep one or two spares, in case one of your new
monitors dies during a deadline crunch.
Let's see...if they've really got to go...you could donate them to a
non-profit organization (your company should get a tax break for that).
Small schools that can't afford newer stuff, churches or community agencies
with tutoring programs---find out which ones use macs and make 'em happy.
