I follow your practice in lay-outing tables.
I use to avoid vertical rules since the white spaces between columns will
give enough separation in most cases.
Horizontal rules I use to separate cells or to group items vertically
(reading rules).
I use a smaller (non-serif) font for tables than for usual text.
Shading or coloring are other techniques to separate columns, which I
sparing choose.
