Christine -

For anyone interested in choosing the right type of illustration I
would heartily recommend:

Illustrating Computer Documentation: The Art of Presenting
Information Graphically on Paper and Online

by William Horton
published by: John Wiley & Sons, 1991
ISBN: 0-471-53845-0

The book discusses every type of visual element you might use to
communicate technical information and procedures:

bulleted or numbered list
table
diagram
flow chart
photograph
line drawing
decision tree
icon
screen shot

. . . and probably some I've forgotten.

It explains how to choose the right type of graphic for each job, and
how to plan, produce and refine your illustrations.

Christine, if you have time you might find it worthwhile to skim the
section on doing your own photography (pp. 100 - 105). It discusses
several tips and traps.

Regards
