As others have pointed out, there is a binding process called
"lay-flat," which is a type of perfect binding with the actual spine
separate from the glued folios, so that the printed book actually does
lie flat. It doesn't make economic sense for a small print run, but
most of the printers here in Silicon Valley can handle it. When you
shop around for a printer, specify it and if your printer can't do it,
ask him for the nearest bindery that can.
