Here are two ideas:

Have them write about something that everyone should know. I like these because they also involve the need for cautions and warnings:

pumping gas
checking oil
making coffee
parking a car

Still keeping it simple, have them write about something they may not know about. You could even provide them with the type of specs we as writers often receive about new equipment that isn't quite developed with the always amusing marketing manager's comment, "You have everything you need to write the manual." Be sure to leave out at least one key detail.

Vehicles come to mind:

changing oil
changing a headlamp
changing windshield washer blades
replacing the battery
