I wouldn't worry too much about how to go about finding help if you get
swamped. Right now there are plenty of available technical writers and you
may just have enough trouble keeping yourself busy. If you do end up with
more work than you can handle, your local paper may be a good place if
you're in a marketplace where there are likely to be plenty of technical
writers.
In my case, when I do help files for a client, I install the customer's
application on my own system (a laptop) and go from there. When I visit my
clients, I take the laptop along and jump on their network for updated
versions or file sharing or the like.
