I'll just add my 2 cents to all of the good advice from the others. Don't worry about having to use CVS compared to some other tool. I have used Visual SourceSafe, CVS, Rational, and StarTeam. None of them can show you Diffs for Word documents and other binaries.

I did like VSS's ability to show you who had a set of Help files checked out.

In StarTeam, you have to remember to Lock it; it's not automatic on check-out.

I put WebHelp systems into CVS only when they were ready to be included in a build. Otherwise, I had other backup/storage locations. I also used CVS to edit the HTML templates created by the developers (part of my job).
