John Posada beat me to it, but I too would use Camtasia.

I have, and it is an outstanding application for motion-based demos
with a reasonably short learning curve...much simpler than Flash, in
fact.

If that does not suffice, I would also consider OpenLaszlo:
http://openlaszlo.org.

For any who has not seen the demos of the Laszlo product, you are in
for a very pleasant surprise.
