Hannah,

check out _The Non-Designers Design Book_ by Robin Williams. It is a nice
intro to effective use of layout, color, font, etc.

It's a quick and entertaining guide. It's only a few bucks, and oh so worth
it!

I've seen color in various use case, class, and sequence diagrams, and I
kinda liked it. But I don't think it's part of any modeling spec to use
color in diagrams. As far as the text being colored; well, just use your
best judgement ;-)
