I appreciate your efforts here, but I think we lost the point of the
original post somewhere.

The OP wanted a numbering technique that would automatically add a colon
suffix to the number, but which she could cross-reference without the
number. She wanted:

Appendix A: Fun with matches

Where the colon came along with the number, plus the ability to create
an x-ref like:

For more on matches, see Appendix A.

I was hoping you'd found a way to create a ListNum or other field that
could recognize a trailing delimiter. As it is, I think the only way to
include the colon is to define the chapter and appendix numbering as
captions.
